2 large mixing bowls
Measuring cups and spoons
1 (2 cup) liquid measuring cup
1 medium skillet

Ingredients

 4 tablespoons unsalted butter, melted (divided for use)

2 cups refrigerated shredded hash browns, blotted with paper towels
½ cup shredded Cheddar cheese
½ teaspoon salt, more to taste
¼ teaspoon pepper, more to taste 
7 eggs
¼ cup whole milk
1 tablespoon hot sauce
1 cup chopped broccoli florets
1 cup diced ham
½ cup finely chopped onion
1 tablespoon minced fresh garlic

 

Instructions


1. Preheat oven to 425°F. Place silicone baking cups on a baking sheet.

2. Using a pastry brush, grease the silicone baking cups with 2 tablespoons melted butter; set aside.

3. In mixing bowl, toss hash browns with shredded cheese. Stir in 1 tablespoon melted butter. Season to taste with salt and pepper.

4. Press 1 tablespoon hash brown mixture onto bottom and up sides of each baking cup.

` 5. Place breakfast bites on baking sheet into oven and bake until golden brown and crisp, about 12-14 minutes.

6. In another mixing bowl, whisk together eggs, milk, hot sauce, ½ teaspoon salt and ¼ teaspoon pepper. Transfer to 2-cup liquid measuring cup.

7. Place remaining 1 tablespoon melted butter in a medium non-stick skillet over medium heat. Add broccoli, ham and onion, cooking until vegetables have softened, about 5 minutes. Stir in garlic and cook for about 1 minute.

8. Spoon 2 tablespoons of broccoli mixture into each breakfast bite cup, and slowly pour egg mixture into each cup, filling cups until almost full.

9. Return breakfast bites on baking sheet to oven and bake for about 15 minutes, or until thermometer inserted in center registers 160°F.

10. Remove from oven and place on a cooling rack for about 5 minutes before serving.

Large (2 cup size or larger) liquid measuring cup

Handstand Kitchen silicone cupcake mold

Ingredients

5 large eggs
Splash of whole milk (a little less than 1/4 cup) 
Shredded cheese (your choice of flavors!)
Fresh spinach leaves, chopped 
Fresh tomatoes, chopped 
Salt and pepper, to taste
(NOTE: * Add or substitute any of your favorite ingredients!)

 

Instructions

1. Preheat oven to 350°F.
2. Using knife and cutting board, carefully chop the fresh tomatoes and fresh spinach (or add any other fresh chopped vegetables or meats that you like!).
3. Whisk the eggs and milk together in the large measuring cup.
4. Whisk in some salt and pepper (to taste ) to the egg mixture. Stir the fresh chopped vegetables into the egg mixture.
5. Place the cupcake mold onto a baking sheet and carefully pour the egg mixture into each cupcake cavity.
6. Bake in the oven for 20-30 minutes.
7. Using oven mitt, carefully remove and place mold on cooling rack. Allow to cool for 5-10 minutes. Carefully flip over to unmold...and enjoy an egg-cellent breakfast adventure!

Ingredients

Pre-made pie crust dough or your own recipe
Mozzarella Cheese
Parmesan Cheese
Marinara Sauce
Mini Pepperonis (Optional)
Egg Wash (optional)

 

Instructions

1. Preheat your oven to 400 degrees F.

2. Roll the dough out on the cutting board and use cookie cutters to cut out shapes. Make sure to cut out 2 of each shape for the front and back of the hand pie. 

*If the dough starts to get soft/warm, set it in the fridge for a few minutes before resuming. You can also place the cut out shapes in the fridge as you continue to work. 

3. Once you have your cut outs, take a spoon and place marinara sauce in the middle of one. Then add a sprinkle of cheese & pepperonis. Make sure to not over stuff as the next part can get messy!

4. Take the other cut out and place it over the first one with the stuffing. Gently press down on the sides until the stuffing is fully enclosed. You can also wet a brush or your finger with water and outline the cutout before pressing if the dough doesn't stick together. 

5. Grease a baking sheet and carefully place the hand pies on it. If you want a nice golden sheen on your pies, brush egg wash over the top of each one. 

*Easy egg wash = 1 egg + 1 teaspoon of water

6. Set in oven and bake for 10-15 minutes, or until crust is golden brown. 

7. Let them slightly cool & enjoy!

Taco-dilla Bites

Ingredients

Tortilla
Ground Beef (or protein of choice)
Taco Seasoning
Salt
Pepper
Shredded Cheese (your choice)
Egg Wash (optional)

 

Instructions

1. Preheat oven to 375 degrees F.
2. In frying pan, cook ground beef until done. Drain excess liquid out of pan. On low heat, mix in salt, pepper and taco seasoning. Set aside. 
3. Use the cookie cutters to press down onto the tortilla to cut out shapes. Make sure to cut 2 of each shape for the front and back. 

4. Take one cut out and brush the side that will face inward with egg wash. Sprinkle some cheese over egg washed side, then carefully spoon ground beef over it, then top it off with another sprinkle of cheese. Take the second cut out and brush the side that will face down with egg wash and gently press. 

(It should look like a mini filled quesadilla. The edges do not have to be sealed.)

5. Place the taco-dilla bites onto the baking sheet and bake in the oven for 5-10 minutes, or until the tortilla is crispy and cheese is melted. 

6. Let cool until safe to handle but still warm. Enjoy with fresh salsa, hot sauce, guacamole or sour cream!

 P.S. Egg wash helps to bind the filling to the tortilla cut outs, but the cheese also helps to do this, so feel free to omit the egg wash.
